About This Template

This bed grows the produce shelf of an Indian kitchen. The tall north line pairs a curry leaf tree — the irreplaceable aromatic that no dried substitute matches — with okra for bhindi masala and the eggplants at the heart of baingan bharta. A chili bench brings the heat in three grades, from everyday cayenne to serious ghost pepper. The ground floor is the rhizome section: fresh turmeric and ginger, both far more fragrant homegrown, planted beside a garlic-and-onion block that starts nearly every curry in existence. The front strip is sown thick with cilantro — used by the bunch, not the sprig — and methi (fenugreek), whose bitter-sweet leaves are a vegetable in their own right. Warm-climate gardeners grow it all outdoors; everyone else pots the curry leaf and rhizomes for the windowsill winter.
