About This Template

This bed is organized as a living color wheel, and the colors are doing real work: the pigments in purple carrots, golden beets, and red cabbage are anthocyanins and carotenoids — the same compounds nutritionists tell us to eat more of. Heirloom tomatoes in yellow, indigo, and green-striped varieties line the north edge so their height never shades the low growers. A band of ruby chard and colored cabbages fills the middle, and the front row is a root-vegetable paintbox planted densely for square-foot-style efficiency. Kids love the reveal when roots come out of the ground; cooks love a harvest basket that looks like a market stall.

Benefits

  • 1Colorful varieties carry more anthocyanins and carotenoids than their plain cousins
  • 2Tall tomatoes sit on the north edge, so every low crop keeps full sun
  • 3Root vegetables are planted intensively — over 20 roots in the front row alone
  • 4Chard and kale regrow after cutting for months of repeat harvests
  • 5The mixed planting confuses pests that hunt by scent and silhouette

Growing Tips

  • 1Harvest chioggia beets young — the candy-cane rings are sharpest small
  • 2Watermelon radishes get sweeter after a light autumn frost
  • 3Stake the indigo tomato early; the anthocyanin-rich fruit is heavy
  • 4Photograph the first full-rainbow harvest basket — then eat it
